For over a decade, we’ve been serving up true Naples-style pizza—made entirely in-house using traditional methods and flour imported straight from Italy. Now, we’re proud to fire up the ovens in Lincoln.
Il Pizzaiolo is the brainchild of Brooklyn-born Peter Lostritto, with family roots tracing back to Naples and Bari, Italy. That heritage is in every single pie we bake. Everything starts with the dough. We mix it fresh and let it slow-ferment for 48 to 72 hours. From there, the pies go straight into an 800° wood-fired oven for about 90 seconds. The result is what true Neapolitan pizza should be: a soft center, a beautifully blistered crust, and a light char.
